One scoop right after your workout is great. You can take one with milk within 30 minutes of waking up to quickly get protein to your muscle after fasting all night. You should do that the morning after your workouts too. Before bed you should either use casein protein with milk or have some cottage cheese. Those are slow release proteins that will feed your muscle for several hours while you sleep.
One scoop is one scoop – doesn’t matter if it’s in 8 oz of water or 32. It’ll just take ya longer to drink it! Personally I use 20 oz of gatorade post-workout & 8 oz of 1% milk with breakfast.

Water is fine. Most of the major brands now are a fine power that mixes well with water, making it quick and easy to take. There are specific amounts you should take if you are hardcore into weight training and such, but 2 times a day is a general dosage.
Some say take it before you workout, some say after – its personal choice. Good job with the fruit after working out – complex carbs are just as important postworkout. I do the same thing.
